A bright and refreshing lemon cake bursting with zesty flavor, topped with delightful cream cheese frosting.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup sour cream
  • 4 large eggs
  • 2 large lemons, zest and juice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring them.
  3. Zest the lemons using a microplane and juice them.
  4. Cream the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well.
  6. Mix in the sour cream, lemon juice, and vanilla extract.
  7. Combine the flour, baking powder, baking soda, and salt in a separate bowl and fold into the wet mixture.
  8. Fold in the lemon zest.
  9. Pour the batter into the prepared pans.
  10. Bake for 30-35 minutes or until a toothpick comes out clean.
  11. Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
  12. Frost and assemble with your favorite cream cheese frosting.
