Deliciously moist muffins made with ripe bananas and rich Nutella, perfect for breakfast or a sweet treat.

Ingredients

  • 2–3 ripe bananas, mashed (about 1 cup)
  • 1/2 cup sugar (white or brown)
  • 1/3 cup vegetable oil (or melted butter)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup Nutella (plus more for topping/swirl)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. Mix the mashed bananas, sugar, vegetable oil, egg, and vanilla extract until well combined.
  3. Combine the all-purpose flour, baking soda, baking powder, and salt in another bowl.
  4. Add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the Nutella into the batter, creating beautiful swirls.
  6. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool slightly before enjoying them warm.

Notes

For best flavor, use very ripe bananas. You can freeze the muffins for up to two months.
