Delicious oatmeal raisin cookies that combine chewy oats with sweet raisins for a comforting treat.

  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 3 cups rolled oats
  • 1 cup raisins
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and white sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, salt, and optional cinnamon in a separate bowl.
  5. Gradually add the dry ingredients to the creamed mixture until combined.
  6. Stir in the rolled oats and raisins until well combined.
  7. Drop rounded tablespoons of dough onto ungreased cookie sheets.
  8. Bake for 10 to 12 minutes or until the edges are lightly browned.
  9. Let cool on wire racks.
