Ingredients

  • 1 cup granulated sugar
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1/2 cup unsalted butter

Instructions

  1. In a saucepan, whisk together the eggs, sugar, orange juice, and orange zest.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens (about 10 minutes).
  3. Remove from heat and stir in the butter until melted and smooth.
  4. Strain the curd through a fine-mesh sieve into a bowl to remove any lumps.
