Orange Strawberry Muffins with Streusel Topping

Fluffy and fragrant muffins bursting with strawberries and citrus flavors, topped with a crunchy streusel.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup fresh strawberries, chopped
  • Zest of 1 orange
  • Juice of 1 orange
  • 1/4 cup brown sugar
  • 1/2 cup chopped nuts or oats (for streusel topping)
  • 1 tsp cinnamon (for streusel topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients: whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Combine the wet ingredients: mix milk, vegetable oil, egg, orange zest, and orange juice in another bowl until well combined.
  4. Bring it all together: pour the wet ingredients into the dry mixture and stir gently until just combined, then fold in chopped strawberries.
  5. Prepare the streusel topping by mixing brown sugar, nuts or oats, and cinnamon in a small bowl.
  6. Fill the muffin cups about 2/3 full with batter and top with streusel mixture.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool slightly before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for a month. Reheat when ready.
