  • 1 can coconut milk, chilled
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup orange juice
  • 2 tablespoons orange zest
  • 5 to 6 vegan ladyfingers or sponge cake
  • Cocoa powder for dusting

Instructions

  1. Blend the soaked cashews, chilled coconut milk, powdered sugar, and vanilla extract until smooth and creamy to create the mascarpone.
  2. Mix the orange juice and zest in a separate bowl, creating a fragrant citrus delight.
  3. Dip each ladyfinger briefly in the orange juice mixture, ensuring they soak but do not become too soggy.
  4. Layer the dipped ladyfingers in a serving dish, spreading half of the cashew-coconut mascarpone over them.
  5. Repeat with another layer of dipped ladyfingers followed by the rest of the mascarpone.
  6. Chill for at least 240 minutes or overnight, allowing the flavors to meld beautifully.
