A delightful casserole capturing the flavors of traditional French toast with the convenience of overnight preparation.

  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup chopped pecans
  • Maple syrup to taste

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13 inch baking dish with melted butter.
  2. Slice the French bread into 1-inch thick pieces and arrange in the baking dish.
  3. Prepare the bananas by peeling and slicing them into rounds, tucking between the bread pieces.
  4. Whisk together eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla, cinnamon, and salt in a large bowl.
  5. Soak the bread and banana layers with the egg mixture, pressing down gently.
  6. Chill covered in the refrigerator overnight or at least 6 hours.
  7. Add chopped pecans over the top and bake uncovered for 45 to 55 minutes until golden brown.
  8. Rest for 10 minutes before serving, drizzling with maple syrup and powdered sugar if desired.

Notes

For an indulgent twist, consider adding chocolate chips or dried fruit. Use stale bread for better absorption of the custard.
