Classic Vanilla Panna Cotta with Fresh Berries

A silky and creamy Italian dessert topped with fresh berries, perfect for any occasion.

Ingredients

  • 500 ml heavy cream
  • 100 ml whole milk
  • 80 g granulated sugar
  • 1 vanilla bean
  • 7 g powdered gelatin
  • 2 tbsp cold water
  • Fresh berries for serving
  • Mint leaves for garnish

Instructions

  1. Bloom the gelatin: Sprinkle powdered gelatin over cold water in a small bowl and let it bloom for 5 minutes.
  2. Prepare the vanilla: Split the vanilla bean lengthwise and scrape out the seeds.
  3. Combine dairy ingredients: In a saucepan, combine heavy cream, whole milk, granulated sugar, vanilla seeds, and the vanilla pod.
  4. Heat the mixture: Heat the mixture over medium heat, stirring until the sugar dissolves and it just begins to simmer. Do not boil.
  5. Dissolve the gelatin: Remove the saucepan from heat, discard the vanilla pod, and whisk in the bloomed gelatin until fully dissolved.
  6. Strain the mixture: Strain the mixture through a fine mesh sieve into a jug to remove any lumps.
  7. Pour into molds: Pour the strained mixture into lightly oiled ramekins or molds and let them cool to room temperature.
  8. Chill until set: Cover and refrigerate for at least 4 hours or until set.
  9. Serve beautifully: To serve, dip the molds briefly in warm water, invert onto plates, and garnish with fresh berries and mint leaves.

Notes

Substitute vanilla beans with vanilla extract if necessary, using it after removing the heat. For a dairy-free version, use coconut or almond milk.
