A rich and creamy pasta dish with perfectly seared chicken and a luscious garlic Parmesan sauce, perfect for cozy nights.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 8 ounces linguine or spaghetti
  • 1 tablespoon butter
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Season the chicken by seasoning both sides with salt and pepper to taste.
  2. Sear the chicken in olive oil in a large skillet over medium heat for 4-5 minutes on each side until golden brown and fully cooked. Remove from the skillet.
  3. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  4. Create the sauce by adding chicken broth, bringing it to a simmer and scraping up any browned bits. Then add heavy cream and simmer gently.
  5. Incorporate Parmesan cheese until melted and well mixed. Add crushed red pepper flakes if desired.
  6. Cook the pasta according to package instructions, drain, and set aside.
  7. Combine sliced chicken back into the skillet with the sauce, toss in cooked pasta and mix until well combined.
  8. Enrich the sauce by adding butter and letting it melt.
  9. Garnish with chopped fresh parsley before serving.

Notes

Pairs beautifully with a green salad or crusty garlic bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
