A comforting and crispy chicken dish coated with garlic and Parmesan, perfect for a weeknight dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper until well combined.
  3. Beat the eggs in a separate bowl.
  4. Dip each chicken breast into the egg mixture and allow the excess to drip off before coating it in the Parmesan mixture.
  5. Heat olive oil in a skillet over medium heat to cover the bottom.
  6. Cook the chicken for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to the preheated oven and bake for 15-20 minutes until cooked through.
  8. Serve your Parmesan Crusted Chicken hot from the oven.

Notes

To keep the coating crispy, reheat leftovers in the oven. Experiment with herbs for added flavor.
