  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 drops pastel pink food coloring
  • 2 drops pastel yellow food coloring
  • 2 drops pastel blue food coloring
  • 2 drops pastel green food coloring

Instructions

  1. Preheat the oven to 325°F (160°C) and lightly grease a 9-inch pie pan.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter until moistened. Press this mixture into the pie pan to form the crust.
  3. Beat the cream cheese and 1/2 cup sugar until smooth and creamy.
  4. Add eggs one at a time, mixing after each addition, then stir in sour cream and vanilla extract.
  5. Divide the cheesecake batter evenly into four small bowls and tint each with one pastel food coloring.
  6. Spoon alternating dollops of each colored batter into the crust and use a skewer or knife to swirl the colors together.
  7. Bake for 35 to 40 minutes until the center is set but still slightly jiggly.
  8. Cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

Make sure your cream cheese is fully softened and do not skip the chilling time for best results.
