A delightful and comforting baked oatmeal featuring fresh peaches, perfect for summer breakfasts.

  • 2 cups rolled oats
  • 2 cups milk (or dairy-free alternative)
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 cups fresh peaches, sliced
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish to prevent sticking.
  2. Combine the rolled oats, milk, brown sugar, baking powder, cinnamon, and salt in a large bowl. Mix well until everything is evenly distributed.
  3. Whisk together the eggs and vanilla extract in a separate bowl. Once mixed, add this to the oat mixture and stir until fully combined.
  4. Fold in the sliced peaches, making sure they are scattered throughout the mixture.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the oats are set.
