A delightful dish combining marinated chicken with the fresh sweetness of peaches, evoking summer evenings.

Ingredients

  • 4 chicken breasts
  • 2 peaches, sliced
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together balsamic vinegar, olive oil, minced garlic, and salt and pepper.
  3. Prepare the chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Layer the peach slices atop the chicken.
  5. Bake for 25-30 minutes, until cooked through.
  6. Garnish with fresh basil before serving.

Notes

For extra flavor, marinate the chicken in the balsamic mixture for a couple of hours. If peaches aren’t in season, use frozen ones, thawed and drained.
