A delightful combination of cookies and peach cobbler, featuring sweet peaches and a hint of cinnamon.

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh peaches, diced
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking soda, salt, and cinnamon in another bowl.
  5. Add the dry mixture to the wet mixture, stirring until well combined.
  6. Fold in the diced peaches gently.
  7. Drop spoonfuls of dough onto baking sheets lined with parchment paper.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheets before transferring them to wire racks.

Notes

Use ripe but firm peaches for the best texture and flavor. Store leftover cookies in an airtight container at room temperature for up to a week.
