Delicious and portable Peach Cobbler Muffins combine the classic flavors of peach cobbler in a convenient muffin format, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. Combine the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. Whisk the egg in another bowl, then add the milk, melted butter, and vanilla extract, stirring until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Fold in the diced peaches into the batter carefully.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Mix the brown sugar and ground cinnamon, then sprinkle over the tops of the muffins.
  8. Bake for 18–22 minutes, or until a toothpick comes out clean.
  9. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack.

Notes

These muffins are great served warm with a dollop of whipped cream or vanilla ice cream. Store leftovers in an airtight container for up to 3 days.
