  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and cubed
  • 68 tablespoons ice water
  • 4 cups fresh peaches, peeled and diced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Mix the dry ingredients in a large bowl: flour, salt, and sugar.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Divide into discs, wrap, and refrigerate for 1 hour.
  4. Combine the diced peaches, sugar, lemon juice, cornstarch, and vanilla extract; let macerate for 15 minutes.
  5. Preheat the oven to 400°F (200°C); line a baking sheet with parchment paper.
  6. Roll out one disc of dough to about 1/8 inch thick and cut into 5-inch circles.
  7. Place a tablespoon of peach filling in the center of each circle.
  8. Fold the dough over to create a half-moon and crimp the edges to seal.
  9. Brush the tops with the beaten egg and sprinkle with coarse sugar.
  10. Bake for 20-25 minutes until golden brown and bubbly.

Notes

For a twist, substitute peaches with other fruits like cherries or blueberries. Serve with vanilla ice cream or drizzle with heavy cream for added indulgence.
