  • 1 cup oat flour
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the oat flour, baking soda, and salt in a bowl.
  3. Combine the peanut butter, honey (or maple syrup), and vanilla extract in another bowl until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Fold in chocolate chips if desired.
  6. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  7. Flatten the cookies slightly with the back of a fork.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for three months. Pair them with fresh fruit or yogurt.
