A nostalgic treat that combines crunchy pecans and creamy sweetness, perfect for sharing with family and friends.

Ingredients

Scale
  • 1 cup pecans, chopped
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup sweetened condensed milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for rolling)
  • 12 teaspoons water (if needed)

Instructions

  1. Combine the mixture: In a saucepan over medium heat, combine granulated sugar, corn syrup, sweetened condensed milk, and butter. Stir until the mixture boils and the sugar dissolves.
  2. Simmer the mixture: Once boiling, reduce heat and let it simmer for 5 minutes, stirring constantly to prevent the sugar from burning.
  3. Stir in the pecans and flavor: Remove from heat and stir in chopped pecans, vanilla extract, and salt. Allow the mixture to cool slightly.
  4. Form the log: Once cool enough to handle, scoop the mixture out onto a large piece of parchment paper. Form it into a log shape, roughly 2 inches in diameter.
  5. Coat with powdered sugar: Roll the log in powdered sugar to coat it evenly.
  6. Chill to set: Wrap the log in parchment paper and refrigerate for several hours until set.
  7. Slice and serve: Once set, slice into pieces and enjoy this delightful treat.

Notes

For best flavor, use freshly chopped pecans. Ensure the mixture is well-cooled before shaping to maintain the log’s shape.
