A simple yet delicious banana bread recipe that transforms ripe bananas into a comforting treat.

Ingredients

  • 3 pieces ripe bananas (mashed)
  • â…“ cup melted coconut oil
  • 1 large beaten egg
  • 1 teaspoon vanilla extract
  • ¾ cup brown sugar (lightly packed)
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 ½ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl.
  3. Melt your coconut oil in a separate bowl.
  4. Mix in the melted coconut oil, beaten egg, and vanilla extract with the mashed bananas.
  5. Add the brown sugar and stir until well blended.
  6. Incorporate the baking soda and salt, then add the flour gently.
  7. Pour the batter into a greased 9×5 inch loaf pan.
  8. Bake for about 60 minutes or until a toothpick comes out clean.
  9. Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Serve warm with butter or honey. Store in an airtight container for up to 3 days or freeze for up to 3 months.
