A simple yet beloved banana bread recipe that transforms overripe bananas into a warm, comforting loaf.

  • 3 ripe bananas (mashed)
  • 1/3 cup melted coconut oil
  • 1 large beaten egg
  • 1 teaspoon vanilla extract
  • 3/4 cup brown sugar (lightly packed)
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add the melted coconut oil, beaten egg, vanilla extract, and brown sugar to the mashed bananas and stir well.
  4. Whisk together the baking soda, salt, and flour in a separate bowl.
  5. Pour the dry ingredients into the wet ingredients and gently fold them together.
  6. Grease a 9×5 inch loaf pan or line it with parchment paper.
  7. Pour the batter into the prepared pan, spreading it evenly.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
