A moist and delicious zucchini bread infused with cinnamon and vanilla, perfect for any occasion.

  • 1 cup grated fresh zucchini (about 1 medium zucchini)
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 cup chopped nuts or chocolate chips (Optional)

Instructions

  1. Prepare the zucchini by washing and grating it, then wring out excess moisture.
  2. Mix dry ingredients: in a bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
  3. Combine wet ingredients: beat together eggs, sugar, oil, and vanilla until creamy.
  4. Incorporate the grated zucchini into the wet mixture.
  5. Merge the dry and wet mixtures, stirring gently until just combined.
  6. Add optional nuts or chocolate chips if desired.
  7. Bake the batter in a greased loaf pan at 350°F (175°C) for about 50 minutes.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

For an extra flavor twist, experiment with nutmeg or ginger. Store leftovers tightly wrapped.
