A comforting dish of marinated roasted chicken served with turmeric-infused rice, capturing the vibrant flavors of Peru.

  • 2 tbsp olive oil
  • 2 tbsp ají amarillo paste
  • 1 tbsp paprika
  • 1 tsp ground cumin
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 cups long-grain rice
  • 1 medium carrot, diced
  • 1 cup peas
  • 2 tsp turmeric
  • 4 cups chicken stock
  • 1/4 cup cilantro, chopped

Instructions

  1. Prepare the Marinade: In a bowl, combine olive oil, ají amarillo paste, paprika, cumin, garlic, soy sauce, red wine vinegar, oregano, salt, and pepper to form a flavorful marinade.
  2. Marinate the Chicken: Rub the marinade all over the chicken pieces, ensuring every nook and cranny is coated. Cover and refrigerate for at least 120 minutes (or overnight for maximum flavor).
  3. Preheat the Oven: Preheat your oven to 200°C (400°F) to achieve the coveted crispiness.
  4. Roast the Chicken: Place the marinated chicken on a roasting rack. Roast for about 45 minutes or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is crispy.
  5. Sauté the Aromatics: While the chicken roasts, heat vegetable oil in a saucepan over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant.
  6. Add Vegetables and Rice: Stir in the diced carrot, peas, and turmeric. Next, add the long-grain rice and sauté for about 2 minutes, ensuring the rice is well-coated and slightly toasted.
  7. Simmer the Rice: Pour in the chicken stock, bringing the mixture to a gentle simmer. Cover and reduce heat to low. Cook for 15-18 minutes or until the rice is tender and has absorbed the liquid.
  8. Fluff and Finish the Rice: Once the rice is cooked, remove from heat and stir in the chopped cilantro. Fluff the rice with a fork to let the flavors mingle.
  9. Plate the Dish: On a large platter, serve the flavorful rice topped generously with the roasted chicken pieces. Garnish with additional cilantro for a fresh finish.

Notes

For enhanced flavor, marinate the chicken overnight and use bone-in chicken pieces for more moisture.
