A flavorful Peruvian chicken dish with a vibrant creamy green sauce, perfect for family dinners or gatherings.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups fresh cilantro leaves, packed
  • 1 jalapeño, seeds removed (optional for heat)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Create the marinade by mixing olive oil, cumin, paprika, salt, and pepper.
  3. Marinate the chicken by rubbing the marinade over both sides of each breast.
  4. Place the marinated chicken in a baking dish.
  5. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  6. Prepare the creamy green sauce by blending cilantro, jalapeño (if using), mayonnaise, Greek yogurt, lime juice, garlic, and salt.
  7. Blend until smooth and adjust seasoning if necessary.
  8. Rest the chicken for a few minutes before slicing.
  9. Serve the sliced chicken drizzled with the creamy green sauce and garnish with extra cilantro if desired.

Notes

Serve with rice, quinoa, or a side salad. Leftovers can be stored in the refrigerator for up to 3 days.
