A refreshing salad featuring cheese tortellini, vibrant cherry tomatoes, fresh spinach, and basil pesto, topped with pine nuts and Parmesan cheese.

Ingredients

  • 8 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1/2 cup pesto sauce
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, spinach, and pesto sauce.
  3. Toss gently to coat all the ingredients evenly with the flavorful pesto.
  4. Add pine nuts and grated Parmesan cheese, season with salt and pepper, and mix well.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing twist.
