  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup crushed pineapple, drained

  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8×8-inch baking pan with butter or line it with parchment paper.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Add the large eggs and vanilla extract, mixing well until fully combined.
  5. Whisk together the sifted flour, shredded coconut, and baking powder in a separate bowl.
