A sweet and tangy pineapple cake filling that adds a burst of tropical flavor to your desserts.

  • 1 can (20 oz) crushed pineapple in juice, drained
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Combine the drained crushed pineapple with sugar, cornstarch, and water in a medium saucepan.
  2. Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil.
  3. Remove from heat and stir in the vanilla extract and lemon juice.
  4. Allow the filling to cool before using it between cake layers, in cupcakes, or in other desserts.

Notes

Make sure to drain the crushed pineapple well to avoid extra liquid. For a smoother texture, blend the mixture after cooking.
