A nostalgic dessert featuring caramelized pineapples and a moist cake, perfect for family gatherings.

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can sliced pineapples (in juice)
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a small saucepan and pour it into a 9×13 inch baking pan.
  3. Sprinkle the brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices on top of the sugar and place a Maraschino cherry in each.
  5. Mix the flour, granulated sugar, milk, eggs, vanilla extract, baking powder, and salt until smooth.
  6. Pour the batter over the pineapple arrangement.
  7. Bake for 30-35 minutes until a toothpick comes out clean.
  8. Invert the cake onto a serving plate after cooling for a few minutes.

Notes

Serve warm with vanilla ice cream or whipped cream. Can be stored at room temperature for up to three days or refrigerated for a week.
