A luxurious, no-bake dessert that combines creamy mascarpone with tart raspberries and crunchy pistachios, perfect for summer celebrations.

Ingredients

  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • Ladyfinger cookies
  • 1 cup fresh raspberries
  • 1/2 cup roasted pistachios, chopped
  • 2 oz white chocolate, grated

Instructions

  1. Whip the heavy cream until soft peaks form.
  2. Combine mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold the whipped cream into the mascarpone mixture until well combined.
  4. Prepare ladyfinger cookies by dipping them in brewed coffee and layering them in a serving dish.
  5. Spread a layer of the mascarpone mixture over the ladyfingers.
  6. Add a layer of fresh raspberries and sprinkle with chopped pistachios.
  7. Repeat the layering process until all ingredients are used, finishing with a mascarpone layer.
  8. Garnish with grated white chocolate on top.
  9. Chill in the refrigerator for at least 240 minutes before serving.

Notes

For best flavor, prepare the layers one day in advance and allow to chill overnight.
