A luxurious twist on the classic Italian dessert, this pistachio tiramisu combines creamy mascarpone, whipped cream, and the nutty flavor of pistachios for a delightful experience.

  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 1/4 cup coffee liqueur (optional)
  • 24 ladyfinger cookies
  • 2 tablespoons chopped pistachios for garnish

Instructions

  1. Grinding the Pistachios: In a food processor, pulse the pistachios until finely ground, being careful not to turn them to paste.
  2. Whipping the Cream: In a mixing bowl, whip the heavy cream until soft peaks form.
  3. Mixing the Mascarpone: In another bowl, combine mascarpone cheese, sugar, and vanilla extract, stirring until just blended.
  4. Folding in the Cream: Gently fold the whipped cream into the mascarpone mixture until combined.
  5. Preparing the Espresso Mixture: Mix the cooled espresso with coffee liqueur in a shallow dish.
  6. Dipping the Ladyfingers: Quickly dip each ladyfinger in the espresso mixture.
  7. Layering the Base: Layer the dipped ladyfingers in a serving dish.
  8. Spreading the Mascarpone Mixture: Spread half of the mascarpone mixture over the layer of ladyfingers.
  9. Repeating the Layers: Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  10. Chilling: Cover the dish and chill for at least 4 hours or overnight.
  11. Garnishing Before Serving: Before serving, garnish with chopped pistachios.
