A comforting and delicious twist on classic prime rib using chuck roast, perfect for family dinners.

Ingredients

  • 1 chuck roast
  • 2 tablespoons prime rib rub
  • 4 cloves garlic, minced
  • 2 cups assorted vegetables (carrots, potatoes, onions)
  • Salt and pepper to taste
  • Beef broth or water (optional, for slow cooking)

Instructions

  1. Preheat your oven or slow cooker to 300°F (150°C).
  2. Rub the chuck roast with prime rib rub, minced garlic, salt, and pepper.
  3. Place the seasoned roast in a roasting pan or slow cooker, adding assorted vegetables around it.
  4. Add a splash of beef broth or water if using a slow cooker.
  5. Cook for about 3-4 hours in the oven or 6-8 hours in the slow cooker until tender.
  6. Serve the roast sliced with the vegetables, sharing with family and friends.

Notes

Marinate the chuck roast overnight for more flavor. Use a meat thermometer to check for doneness.
