A nostalgic potato salad with creamy mayonnaise and tangy mustard, perfect for summer gatherings.

  • 1 cup Mayonnaise
  • 2 tbsp Mustard
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Celery, chopped
  • 1/2 cup Onion, diced
  • 4 Hard-boiled eggs, chopped
  • 1 tsp Paprika

Instructions

  1. Boil the potatoes until tender, about 15-20 minutes. Cool and peel the skins.
  2. Cube the cooled potatoes into bite-sized pieces.
  3. Prepare the dressing by mixing mayonnaise, mustard, salt, and pepper in a bowl.
  4. Combine chopped celery, diced onions, and hard-boiled eggs with the cubed potatoes.
  5. Mix the dressing into the potato mixture and stir gently.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Sprinkle with paprika before serving for added flavor and color.
