Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups vegetable or chicken broth
  • 1 cup milk or cream
  • 2 tablespoons butter

Instructions

  1. Sauté the onions: In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until translucent.
  2. Combine potatoes and broth: Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (15-20 minutes).
  3. Purée the soup: Use a potato masher or immersion blender to purée the soup to your desired consistency, leaving some chunks for texture.
  4. Creamy addition: Stir in the milk or cream, tasting and seasoning with salt and pepper. Heat through.
  5. Serve and garnish: Serve hot, garnished with your choice of toppings like shredded cheese, bacon, or chives.
