Tender cookies infused with pumpkin spice and topped with luscious cream cheese frosting, perfect for fall gatherings.

  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon espresso powder
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons cream cheese (for frosting)
  • 1 tablespoon milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet.
  2. Mix the pumpkin puree, sugar, and softened butter until smooth. Add in the egg and mix well.
  3. Combine the flour, pumpkin pie spice, espresso powder, baking soda, and salt. Gradually add to the wet mixture until fully combined.
  4. Form spoonfuls of dough onto the baking sheet, spaced apart.
  5. Bake for 10-12 minutes, or until lightly golden.
  6. Prepare the frosting by whisking together the powdered sugar, cream cheese, and milk until smooth.
  7. Frost each cooled cookie with a dollop of frosting.
