A colorful and creamy Ranch Pasta Salad perfect for summer gatherings.

Ingredients

  • 8 ounces pasta (rotini or shells)
  • 1 cup ranch dressing
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Once it’s al dente, drain and rinse it under cold water to stop the cooking process.
  2. In a large bowl, combine the cooked pasta with the ranch dressing, cherry tomatoes, cucumber, red onion, bell pepper, and shredded cheese.
  3. Gently toss all the ingredients together until they’re well combined and coated in the ranch dressing.
  4. Sprinkle in salt and pepper to taste, adjusting based on your personal preference.
  5. Cover the bowl and chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.
  6. Garnish with fresh parsley if desired, and serve chilled to enjoy the refreshing flavors!

Notes

Leftover salad can be stored in an airtight container in the refrigerator for up to 3 days.
