A delightful baked oatmeal packed with hearty oats, creamy almond butter, and sweet raspberries, perfect for breakfast.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or almond milk)
  • 1/2 cup almond butter
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh raspberries
  • 1/4 cup sliced almonds
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, milk, almond butter, maple syrup, vanilla extract, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Fold in the raspberries and half of the sliced almonds.
  4. Pour the mixture into a greased baking dish and sprinkle the remaining sliced almonds on top.
  5. Bake for 25-30 minutes, or until set and golden brown.
  6. Cool slightly before serving.

Notes

Serve warm with Greek yogurt and honey for an extra special treat.
