A delightful raspberry filling that adds flavor and color to cakes and cupcakes.

  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Combine raspberries, sugar, and lemon juice in a saucepan.
  2. Mix cornstarch with water in a separate bowl until smooth, then add to the saucepan.
  3. Bring the mixture to a boil over medium heat, stirring constantly until thickened.
  4. Remove from heat and stir in vanilla extract.
