  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine the flour, cocoa powder, baking soda, and salt. Whisk to integrate.
  3. In another bowl, mix together the melted butter, sugar, eggs, red food coloring, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the white chocolate chips, if using.
  6. Spoon the batter into the mini muffin pan, filling each cup about 2/3 full.
  7. Bake for 10-12 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before removing from the pan.
