Delightful red velvet cookies filled with a creamy, sweet cream cheese filling, perfect for any occasion.

  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, cocoa powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg, red food coloring, and vanilla extract to the butter mixture, and mix well.
  5. Combine the dry ingredients into the wet ingredients, mixing until just combined.
  6. Make the cream cheese filling by beating the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Form cookie dough balls, flatten them, place a teaspoon of cream cheese filling, and wrap the dough around it.
  8. Prepare a baking sheet with parchment paper and place the stuffed dough balls on it.
  9. Bake for 12-15 minutes until slightly crinkly on top.
  10. Cool for a few minutes before transferring to a wire rack.

Notes

These cookies are perfect with a glass of milk or coffee. They can also be served with a scoop of vanilla ice cream.
