These red velvet cupcakes are soft, moist, and topped with a creamy cream cheese frosting, perfect for any celebration.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Sift together the flour, sugar, baking soda, cocoa powder, and salt.
  3. Whisk together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.
  4. Combine the wet and dry ingredients, mixing until just blended.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  7. Cool the cupcakes completely.
  8. Make the cream cheese frosting by beating cream cheese and butter until smooth.
  9. Add powdered sugar and vanilla, mixing until fluffy.
  10. Frost the cooled cupcakes and enjoy!

Notes

Store leftovers in an airtight container at room temperature for up to three days.
