A stunning Red Velvet Strawberry Cheesecake with a luscious cream cheese filling and fresh strawberry toppings.

  • 2 cups red velvet cake mix
  • 1/2 cup butter, melted
  • 1 egg
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup strawberry puree
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine the red velvet cake mix, melted butter, and egg. Mix well until a cohesive dough forms, then press into the bottom of the prepared pan.
  3. Beat the softened cream cheese until smooth. Gradually blend in the sugar and vanilla extract.
  4. Add the strawberry puree to the cream cheese mixture and gently swirl in.
  5. Pour the cream cheese mixture over the prepared crust in the pan.
  6. Bake for 45-50 minutes or until the center is set but still slightly jiggly.
  7. Let the cheesecake cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight.
  8. Top with freshly sliced strawberries before serving.

Notes

Use room temperature cream cheese for a smoother filling. You can substitute strawberry puree with blended strawberries if needed.
