Creamy ricotta cheese stuffed inside sweet Medjool dates, complemented by crunchy pistachios and a drizzle of honey.

  • 12 Medjool dates
  • 1 cup ricotta cheese
  • 1/3 cup pistachios, chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pit the Medjool dates and set them aside.
  3. In a mixing bowl, combine ricotta cheese, chopped pistachios, honey, vanilla extract, and a pinch of salt.
  4. Stuff each date with the ricotta mixture.
  5. Place the stuffed dates on a baking sheet and bake for about 10-12 minutes.
  6. Remove from the oven and drizzle with additional honey if desired before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Enjoy chilled or reheated.
