Creamy and delightful roasted garlic mashed butternut squash, perfect as a comforting side dish for any meal.

Ingredients

  • 1 large butternut squash, peeled and cubed
  • 4 cloves garlic, roasted
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • 1/4 cup heavy cream (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash into cubes and place them on a baking sheet.
  3. Drizzle with olive oil, season with salt and pepper, and roast in the oven for about 25-30 minutes or until tender.
  4. Wrap the garlic cloves in foil and add them to the baking sheet to roast during the last 10 minutes.
  5. Once the squash and garlic are done, place them in a mixing bowl.
  6. Add butter and heavy cream (if using).
  7. Mash until smooth and creamy.
  8. Taste and adjust seasoning as necessary.
  9. Serve warm as a flavorful side dish.
