Delicious roasted purple potatoes glazed with balsamic vinegar and honey, perfect as a side dish or star of the meal.

Ingredients

  • 2 pounds purple potatoes, halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together the balsamic vinegar, olive oil, honey, garlic, salt, and black pepper.
  3. Add the halved purple potatoes to the bowl and toss to coat evenly.
  4. Spread the potatoes in a single layer on a baking sheet. Roast for about 25-30 minutes, flipping halfway.
  5. Remove from the oven and serve warm.

Notes

For extra flavor, roast garlic cloves with the potatoes. Substitute red potatoes or Yukon Gold if purple potatoes are unavailable.
