  • 1 tsp Fresh Rosemary, chopped

  • 1 tbsp Fresh Parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash, peel, and cut the carrots into uniform pieces, about 1-2 inches long.
  3. Toss the carrots with olive oil, rosemary, thyme, parsley, salt, and pepper until evenly coated.
  4. Spread the carrots on a rimmed baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  6. Serve warm, drizzled with extra olive oil and a sprinkle of flaky sea salt.
