A delightful toast topped with creamy whipped ricotta and sweet, roasted strawberries, perfect for breakfast or brunch.

  • 4 slices sourdough bread
  • 2 cups ricotta cheese
  • 1 pint strawberries
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • Pinch salt
  • Pinch black pepper
  • 8 leaves fresh mint

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Toss the strawberries with olive oil, half of the honey, and a pinch of salt.
  3. Roast the strawberries on the baking sheet for 10 to 12 minutes until tender and caramelized.
  4. Whip the ricotta with the remaining honey, lemon zest, and a pinch of salt until smooth and fluffy.
  5. Toast the sourdough slices until golden brown and crisp.
  6. Spread the whipped ricotta over the toasted bread.
  7. Top with the roasted strawberries.
  8. Sprinkle with black pepper, garnish with fresh mint leaves, and drizzle with pan juices or extra honey, if desired.

Notes

For best results, use ripe strawberries and consider different bread types. This dish pairs well with Greek yogurt and granola or drinks like coffee or fruit-infused sparkling water.
