An indulgent dessert that combines the classic flavors of a root beer float into a delicious pie, perfect for summer gatherings.

  • 1 cup root beer
  • 1 cup heavy cream
  • 1 cup vanilla ice cream
  • 2 tablespoons cornstarch
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Mix and heat the root beer base: In a saucepan, mix root beer, sugar, and cornstarch. Cook over medium heat until thickened, then remove from heat and stir in vanilla extract. Allow to cool.
  2. Whip the cream: In a mixing bowl, beat heavy cream to soft peaks, then fold in the vanilla ice cream.
  3. Pour the cooled root beer mixture into the pie crust.
  4. Top with the ice cream mixture and spread evenly.
  5. Chill in the refrigerator for at least 4 hours or until set.
