A warm, comforting casserole made with rotisserie chicken, rice, and cheese that transforms leftovers into a family favorite.

  • 1 rotisserie chicken, shredded
  • 2 cups cooked rice
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded rotisserie chicken, cooked rice, cream of mushroom soup, shredded cheese, frozen mixed vegetables, milk, garlic powder, onion powder, paprika, salt, and pepper in a large mixing bowl.
  3. Pour the mixture into a greased 9×13 inch baking dish and spread it evenly.
  4. Bake in the preheated oven for 25-30 minutes or until bubbly and golden brown.
  5. Let it cool for a few minutes before serving.
