A quick and comforting rotisserie chicken mushroom soup perfect for weeknights.

  • 2 cups mushrooms, sliced
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
  2. Add sliced mushrooms and cook until softened.
  3. Pour in chicken broth and bring to a gentle simmer.
  4. Stir in the shredded rotisserie chicken.
  5. Season with salt and pepper to taste.
