Ingredients

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Create the spice rub by mixing olive oil, chili powder, garlic powder, cumin, salt, and pepper.
  3. Rub the spice mixture generously onto both sides of the salmon fillets.
  4. Grill the salmon for about 5-6 minutes on each side until cooked through.
  5. Prepare the mango salsa by combining mango, red onion, jalapeño, lime juice, and salt in a bowl.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. Flake the cooked salmon into bite-sized pieces and place on the warm tortillas.
  8. Add the mango salsa generously on top of each taco.
  9. Garnish with freshly chopped cilantro and serve immediately.
