  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 cup shelled pistachios, chopped
  • 1/2 teaspoon flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, brown sugar, and honey until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated into the mixture.
  4. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in the chopped pistachios, ensuring they are evenly distributed throughout the dough.
  6. Scoop rounded tablespoons of dough and roll them into balls, placing them about 2 inches apart on the prepared baking sheet.
  7. Sprinkle the tops of each dough ball with flaky sea salt to enhance the flavor.
  8. Bake in the preheated oven for 10 to 12 minutes or until the edges turn golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes before gently transferring them to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to 5 days. Freeze cookie dough for up to three months.
